Banana Bran & Oat Muffins







Ingredients  :


A:  1 cup Bran Buds cereal;  1 1/3 cups almond milk
B:  2 mashed bananas;  1 slightly beaten egg;  1/3 cup unsweetened apple sauce;
      1 tsp vanilla
C:  1 cup whole spelt flour;  2 tsp baking powder;  1 tsp baking soda;  1/2 tsp sea salt;
      1/2 tsp ground cinnamon
D:  1 cup roll oats;  1/2 cup ground flaxseed;  1/4 cup brown or raw cane sugar
E:  1 cup raisins or craisins
 

Directions  :

 
Preheat oven to 375F. Grease or line 12 muffin tins.
Mix B together.
Mix the bran buds and almond milk in A, let it soak for 10 minutes, then add to B.
Sift all the C ingredients, mix with D and stir into the combined mixture of
A&B just until blended, add E.
Spoon into the prepared muffin tins and bake for 20 to 22 minutes.
Cool 5 minutes before removing onto a wire rack.
