Roast Pork Loin

This is an easy but delicious way to roast pork loin or pork tenderloin, perfectly done every time.




Ingredients :

1 boneless pork loin; dry seasoning of your choice, I used Italian seasoning, garlic powder,
fresh ground black pepper and paprika for color;  1 Tbsp olive oil; sea salt or Kosher salt
 to taste

Directions :

Rub the seasoning and olive oil all over the pork, put inside a zip lock bag and leave in the
refrigerator overnight.
Take the pork out at least one hour before cooking. Sprinkle Kosher salt all over the pork.
Preheat oven to 500F. 
Insert a meat thermometer into the thickest part of the pork. 
Place the pork in a baking pan on the lower shelf of the oven, cook 5 1/2 minutes per lb.
My pork loin weighs about 3 lbs, so I cook it for 16 1/2 minutes and turn the oven off. Do not 
open the door for 1 hour or until the meat thermometer reaches 140F. 
Remove from the oven and let rest 10 minutes before slicing. The roast will be perfectly
done, slightly pink in the center and very moist.
