Ingredients:
2 cups all purpose flour; 1 Tbsp baking powder; 1 tsp salt;
1/3 cup unsalted butter, cut into small pieces;
1 1/2 cups grated sharp cheddar cheese; 1/3 cup chopped green onion;
4 slices bacon, cooked crisp and chopped; 2/3 cup milk, (I used almond milk)
Directions:
Preheat oven to 425F. Combine flour, baking powder and salt in mixing
bowl. Cut in cold butter with a pastry blender until mixture resembles coarse
breadcrumbs. Stir in cheese, green onion and bacon, mix well. Add the milk
all at once, stir to form a soft dough. Turn out onto floured surface and knead
about 8 to 10 times. Don't over knead or the butter will melt. Roll out or pat
dough to about 3/4" thick. Cut with a floured 2" round cookie cutter. Place on
ungreased baking sheet and bake for 15 - 20 mins or until light golden. Serve
warm. Makes about 25 biscuits.
