1 large bunch kale, stems trimmed off, leaves sliced into strips; 1 Tbsp olive oil;
5 slices of thick-cut bacon, cooked and cut into pieces; 8 large eggs; 3/4 cup grated cheese;
chopped garlic (optional); salt and fresh ground black pepper to taste; chopped parsley
Directions :
Preheat oven to 375F. Heat oil in a large pan, add the kale and chopped garlic, stir fry until the
kale is all wilted, about 1 - 2 minutes. Remove from heat. In a lightly oiled 2 qt. casserole dish,
layer the kale in the bottom, then the cooked bacon pieces and finally the grated cheese.
In a bowl, beat the eggs with the salt and pepper, pour over the kale mixture, distribute the
eggs evenly until the whole casserole is covered. Bake 25 minutes or until the egg is set. Then
change to broil and bake until the top is golden brown. Sprinkle with chopped parsley and serve.
Makes 4 to 6 servings.
