Creamed Turkey and Green Bean Casserole

This one dish dinner is a good and tasty way to use up leftover mashed
potatoes and roast turkey or chicken.



Ingredients :

2 cups cooked turkey or chicken, cubed;  16 oz frozen green beans;
4 cups of mashed potatoes;  1/2 cup shredded cheddar cheese; pinch of paprika
For the cream sauce :  2 Tbsp butter;   2 Tbsp olive oil;  1/4 cup flour;
1/2 tsp sea salt;  1/8 tsp pepper;  1/2 tsp chicken bouillon granules;
1 cup water;  1/4 cup milk (I used almond milk)

Directions :

Preheat oven to 375F. Put the frozen green beans into a pot with 1/2 cup water,
bring to a boil on medium high heat. Stir, reduce heat to simmer, cover and
cook for 10 mins. Drain well and arrange in a lightly oiled casserole dish.
In a saucepan, melt the butter together with the olive oil over medium heat.
Stir in the flour until smooth, gradually add the milk and water, mix till smooth.
Add the chicken bouillon granules, salt and pepper. Bring to a boil, stirring
frequently. Remove from heat and add the turkey cubes, mix well. Pour over
the green beans. Sprinkle some paprika on top. Warm the mashed potatoes in
the microwave and spread on top of the turkey. The mashed potatoes should be
enough to cover the whole top. (I didn't have enough here). Sprinkle with the
shredded cheddar cheese and bake for 20 mins, then change to broil and cook
until the top is bubbling and turns golden brown, about 2 to 3 mins.
