Ingredients:
1 standing rib roast (2 bones roast, about 4lb)
Rub for the roast :
1/4 cup soften butter, 1 tsp black pepper, 1 tsp sea salt, 1/2 tsp cayenne,
1tsp dried herb (any kind, I used Rosemary and Thyme)
Directions:
Take roast out from the fridge at least 6 hours before cooking.
Mix the rub together and spread evenly on all side of the roast.
Preheat oven to 500F. Attach a meat thermometer to the middle of the roast.
For the cooking time, give 5 mins. for every lb of the roast.
For example, this roast is about 4.5 lb, so 5 x 4.5 = 22.5 mins.
Put the roast in the middle rack of the oven. When times up, turn off the oven.
DO NOT OPEN THE OVEN DOOR. Leave the roast inside for about 2hours
or until the meat thermometer reaches 130F. This roast took just 1 hour.
Let the roast rest for about 5 mins, slice and serve.
This method works for larger roast too, just double the rub's ingredients.
