Pan Seared Sea Scallops

Ingredients:

10 big sea scallops,  2 tsp unsalted butter,  2 tsp olive oil,  Kosher salt,
freshly ground black pepper

Directions:

Rinse the scallops under running water, remove the attached small muscle from
each scallop and pat dry. Heat a frying pan on high heat, add the butter and olive
oil. Salt and pepper the scallops, gently add to the pan when the oil begins to
smoke. Fry for 1 1/2 min per side until golden brown.


I
It is better to fry the scallops in 2 batches (which I will do next time) to prevent
lowering the temperature of the oil and the heat of the pan.
