Corn Dog Muffins

Ingredients :

1 cup all purpose flour;  1 cup yellow cornmeal;  1/3 cup sugar (or honey); 2 tsp baking powder;
1 tsp salt;  1 cup milk (or soy/almond milk);  2 eggs, slightly beaten; 1/4 cup oil, (can use
melted butter, I used virgin coconut oil);  1 cup grated cheddar cheese;  6 hot dogs, sliced, (I
used 24 Hillshire Farm Chicken Lit'l Smokies)

Directions :

Preheat oven to 375F. Slightly grease the muffin pan. Mix the flour, cornmeal, baking powder,
sugar and salt in a large mixing bowl. In a smaller bowl, combine the eggs, milk and oil, pour
over the flour mixture slowly, stirring at the same time until blended. Stir the grated cheddar
cheese in and mix well. Arrange the hot dog slices inside the muffin cups, pour the batter over
and fill the cup 3/4 full. Bake in the oven for 30 - 35 minutes or until golden brown. 

Makes 12 large muffins
