Ingredients :
1 lb spareribs, chopped into bite sizes; 1 red bell pepper, cut into small pieces;
1 Tbsp chopped garlic; 1/2 Tbsp chopped shallot; 1 cup water
Marinade : 1/2 tsp sea salt; 1/2 tsp sugar; 1 Tbsp soy sauce; 1 Tbsp cooking wine;
1/2 tsp ginger juice; 2 tsp oyster sauce; fresh ground black pepper
Directions :
Marinate the spareribs for at least 1 hour. Heat the wok with some oil, add the spareribs with
half of the chopped garlic, stir fry until slightly brown, add the water. Cover and cook on
medium high heat, checking frequently until the liquid is almost gone. Uncover and stir until
all the liquid disappears and only oil is left. Remove the spareribs and clean the wok. Heat a
tsp of oil in the wok over medium high heat, add the red pepper, the rest of the garlic and the
shallots, cook for about 2 minutes, add the spareribs, stir fry until the spareribs are heated
through. Remove to a serving plate.
