Tuna Salad

This is more of a salad than as filling for sandwiches. I like to serve it on lettuce leaves together with a loaf of fresh Artisan bread for a light lunch or dinner.





Ingredients :

2 (6oz) cans of tuna, drained;  1 apple, peeled, cored and diced;
2 - 3 stalks of celery, diced;  2 hard boiled eggs, diced;  1/4 purple onion, diced;
1 can black bean, washed and drained; 1/2 carrot, grated;  juice of 1 lemon;
1 tsp chopped fresh herb of your choice, parsley, basil or dill (I didn't use any);
1 cup of light mayonnaise;  1 Tbsp olive oil;  salt and pepper to taste

Directions :

In a large bowl mix the diced apple with the lemon juice and then the rest of
the ingredients. Put in the refrigerator for a few hours to let the flavor blend
in before serving.
