Cinnamon Raisin Bread

This is a bread machine recipe from my friend Maisie.





Ingredients :

1 cup water,  1-2 Tbsp melted butter ( I used 2 Tbsp );  1 tsp salt;
2-3 Tbsp sugar ( I used 3 Tbsp );  2 1/2 cups (380g) bread flour;
2 tsp instant yeast;  3/4 cup raisin;  1 tsp cinnamon powder

Directions :

Set the settings of the bread machine to: sweet bread and light crust.
In the bread machine pan, pour in the water then the melted butter and salt.
Mix the flour, sugar and cinnamon powder together and add on top of the
liquid. Make a dent on the top of the flour and add the yeast. Turn the
machine on.
To make with the Dough setting and bake in the oven:
Set the setting of the bread machine to Dough and follow the above directions.
When the machine stops, take the dough out from the pan. In a lightly floured
surface, press the dough to get the air out. Knead a few times and let the dough
rest covered with a plastic wrap for about 10 mins. Roll the dough out to the
shape of a rectangle with the short side on top. Fold the top down to the middle
and then to the bottom, repeat this process one more time. Put the loaf inside
a 8" x 4"x 4 1/2" bread pan, cover and let it rise again for about an hour or until
the dough fills about 90% of the pan. Remove the plastic and bake in a
preheated 350F oven for 30 - 35 mins. Cool completely before slicing.
