Waffles

Ingredients :

2 cups all purpose flour;  1 1/2 Tbsp sugar;  4 tsp baking powder;  1/4 tsp salt;  
2 eggs, separate into whites and yolks;  1 3/4 cups milk;  1/2 tsp vanilla;  1/2 cup oil

For a healthier but as good version :

1 cup whole wheat flour;  1 cup all purpose flour;  1 Tbsp sugar;  4 tsp baking powder
1/4 tsp salt;  2 eggs, separate into whites and yolks;  1 3/4 cup almond or soy milk;  
1/2 tsp vanilla;  1/4 cup sunflower or grapeseed oil;  1/4 cup unsweetened apple sauce

Directions :

Blender method : Sift the flour, baking powder, salt and sugar together.  Put the egg whites
in the blender and blend until foamy, then add the yolks, milk and vanilla, then the dry
ingredients, blend until mixed. Add the oil. Blend until smooth. 

Mixer method : Sift the flour, baking powder, salt and sugar together. In a stand mixer or 
with a hand held mixer, beat the egg whites until soft peaks formed. In another bowl, beat the
yolks, milk, oil and vanilla togetherr, then add the dry ingredients gradually, beat until
smooth. Remove from the mixer and fold the egg whites in carefully until well blended.

For both methods : Pour enough batter into preheated waffle iron and cook until golden brown. 
Serve immediately or put on a cookie sheet inside a preheated 200F oven to keep warm. 

Serve with your favorite toppings.
