Ingredients:
1 1/4 cups Whole Wheat Flour; 1 cup rolled oat (quick or old fashion);
1/2 cup brown sugar; 2 tsp baking powder; 1/2 tsp baking soda; 1/4 tsp salt;
1 egg, beaten; 1 cup non-fat or low fat plain yogurt; 1/4 cup grape seed oil;
1tsp vanilla extract; 1 cup fresh or frozen blueberries
Directions:
Preheat oven to 400F. In a large bowl combine the egg, oil, yogurt and vanilla,
add the oatmeal, mix well and let it sit for 10 mins. Sift the flour, baking powder,
baking soda and salt together, stir in the brown sugar. Add all at once to the
oatmeal mixture, stir just until blended. Fold in the blueberries and spoon into
12 prepared muffin cups. Bake in the oven for 20 - 25 mins. until golden brown.
