A very light and healthy banana muffin recipe, taste really good even with no flour, oil or butter.
This is now our new breakfast/snack favorite.
Ingredients :
2 1/2 cups old fashioned oats; 1 cup plain low fat greek yogurt; 2 eggs; 1/2 cup brown sugar;
1 1/2 tsp baking powder; 1/2 tsp baking soda; 2 ripe bananas; 1 cup craisins
Directions :
Preheat oven to 400F. Spray or line 12 muffin tin.
Place all of the ingredients except the craisins in a blender or food processor, put the wet
ingredients first and then the sugar, oats, baking powder and baking soda. Blend until oats are
smooth. It only took about 35 seconds with my Vitamix blender. Stir in the craisins, pour into the
muffin tins and bake 18 - 20 minutes, or until toothpick comes out clean.
Updates :
I added 1/2 cup oatbran to the dry ingredients and used a total of 3 bananas for more filling
and bigger breakfast muffins.
If you are not using a high power blender, it is better to add the oatmeal in batches so the
blender won't overheat.
