Crustless Bacon and Egg Pie

Ingredients :

A:   1 cup four, (whole wheat flour or spelt flour);  1 tsp sea salt;  1 tsp baking powder
B:   2 eggs, beaten;  1 1/2 cup milk, ( soy milk or almond milk)
C:   1/2 medium onion, chopped;  6-8 slices of cooked bacon, crush to pieces, (or use
   diced ham or canned tuna);  2 1/2 cups cooked frozen mix vegetables, (or any kind of
   cooked leftover vegetables like spinach, broccoli or zucchini);  8 oz bag of shredded
   cheese (any kind you like, I used a mixture of Parmesan and Gruyere)



Directions :

Preheat oven to 350F. Spray a 12" pie plate with Pam.
Sift ingredients A together. Put ingredients C in a large mixing bowl, sitr to mix. Add A to the
mixture, mix well. Beat the eggs together with the milk and add to A+C stirring at the same 
time until well blended. Pour into the prepared pie plate. Put inside the oven and bake for
50-55 minutes or until a knife comes out clean when inserted into the middle of the pie. 
Cool for 15 minutes on a wire rack before cutting into slices and serve.
