Crash Hot Red Potatoes

Ingredients:

10 small red potatoes,  olive oil,  Kosher salt,  fresh ground black pepper,
finely chopped fresh or dried herb of your choice

Directions:

Boil potatoes in salted water until just soft, drain. Generously oil a baking sheet
with olive oil, arrange the potatoes on the sheet, leave some room between each
potatoe. Using a potatoe masher or the bottom of a cup gently press down on
the potatoes until they are flattened, resembling the shape of a cookie. Brush tops
with olive oil, sprinkle with salt and black pepper and the chopped herb. Put onto
the top rack of a preheated 450F oven for 20 - 25 mins. until golden brown.
