Chinese Peanut Cookies

Ingredients:

200g flour;  130g extra crunchy peanut butter;  100ml grape seed oil;
70g icing sugar; 1/2 tsp baking powder;  1/4 tsp salt;  egg wash,
25 whole peanuts for decoration

材料:

200g 麵粉;  130g 粗粒花生醬;  100ml 葡籽油;  70g 糖粉;  1/2小匙發粉;
1/4小匙幼鹽;  蛋液 (掃面用);  全粒花生約25粒作裝飾

Directions:

Preheat oven to 350F. Sift the flour together with the icing sugar and baking
powder. Stir and mix the peanut butter with the oil and salt, slowly add the flour
mixture. Using your hands, knead into a smooth dough. Divide and shape into
about 25 small rounds, about 20g each. Using a plastic wrap, press the top of
each ball just a little to flatten. Brush with the egg wash and put a peanut on top
of each cookie. Bake in the oven for 18 mins until the cookies turn golden in color.

做法:

焗爐預熱至350F. 將麵粉, 糖粉及發粉過篩. 花生醬放在大盆內加入油及
鹽攪勻, 慢慢分次加入麵粉, 用手揉成一個滑麵糰, 再分成25個小波, 大
約20g 一個, 用保鮮紙隔住向下稍壓, 掃上蛋液, 上放花生一粒, 放入爐內
焗18 分鐘至金黄色.
