Ingredients:
Pork belly pieces with skin 800g, 4 potatoes, peeled and chop into chunks,
2 green onion, chop into 2" long, 6 ginger slices
Seasoning : 1/3 cup light soy sauce, 1 1/2 Tbsp dark soy sauce,
1 Tbsp oyster sauce, 2 Tbsp cooking wine, 1 rock sugar about the
size of a quarter, 3 star anise
Directions:
Coat the potatoes with some oil and roast in a 450F oven until brown,
about 25 minutes. Heat some oil in a pan, stir fry the white part of the green onion,
the ginger, then the star anise, add the pork and fry for about a minute,
add the soy sauce and oyster sauce, mix well before adding the wine and the
rock sugar. Pour enough water to just cover the pork. Turn heat down and simmer
on medium low heat for about 1 hour until the pork is soft, add the potatoe chunks
and continue cooking until the liquid turns thick, add the remaining
green onion and serve.
