These muffins are surprisingly moist and good tasting, and are very easy
to make too.
Ingredients :
1 cup all-purpose flour; 3/4 cup whole wheat flour; 1 tsp baking soda;
1/4 tsp salt; 1 cup coarsely chopped walnuts;
2 eggs, beaten; 1/3 cup almond milk; 1/2 cup unsweetened apple sauce;
1 cup or 3 medium ripe bananas, mashed; 3/4 cup brown sugar;
1/2 tsp vanilla; 1/4 tsp cinnamon powder
Directions :
Preheat oven to 325F. Blend together the eggs, bananas, almond milk and
apple sauce, add the brown sugar, vanilla and cinnamon powder, mix well.
In a large mixing bowl, sift the flour, baking soda and salt together, make
a well in the middle and slowly pour the banana mixture in, stirring at
the same time. Mix until just blended, stir in the walnuts. Pour into lined
muffin tins or a prepared 9"X5" loaf pan. Bake 1 hr. to 1 hr. 10 mins for
loaf or 20 minutes to 25 minutes for muffins.
Updates :
The muffins sticked to the paper cups due to the no oil content. So it is better
to use a loaf pan instead.
I made a loaf using a 5" X 9" nonstick loaf pan. It took about 65 minutes to
bake in a preheated 325F oven.
I used more walnuts this time.
