Roast Pork Ribs and Potatoes

Ingredients:

1 kg pork loin ribs,  2 Tbsp honey
Marinate:  2 Tbsp hoisin sauce,  1 Tbsp light soy sauce,  1/2 Tbsp dark soy sauce,
                 1 Tbsp cooking wine,  1 Tbsp oyster sauce,  1 tsp sugar,
                 1 tsp chopped shallot,  2 tsp chopped garlic,  1 Tbsp oil

Directions:

Marinate the ribs overnight. Put in a preheated 375F oven for about 30 minutes,
baste once or twice with the pan juice. Then brush with the honey and continue
cooking for another 10 minutes until nicely brown. Serve with the roast potatoes.






Roast Potatoes:

 

Ingredients:

1 kg red potatoes, peel and cut into bite size chunks, 1 tsp sea salt,  pepper,
1 Tbsp dried parsley, 2 Tbsp grape seed or olive oil

Directions:

Mix all ingredients together in a large bowl. Arrange in a single layer on oiled
baking sheet. Put in a preheated 400F oven for about 30 minutes, turn the potatoes
and continue cooking for another 20 minutes or until the sides of the potatoes are
golden brown and crispy.
