This is a good way to use up leftover cooked salmon.
Ingredients :
1 cooked salmon fillet, diced; 4 cups baby spinach; 4 cups cooked mixed rice;
1 Tbsp minced garlic; 1/2 tsp sugar; 2 Tbsp soy sauce; 1 Tbsp oyster sauce;
salt and pepper to taste
Directions :
Heat some oil in a nonstick pan, add the salmon, garlic, then the spinach together with the
sugar, stir fry until the spinach wilted, add the rice and mix well. Season with the soy sauce,
oyster sauce, salt and pepper. When the rice is heated through, remove to a serving plate.
