蔴醬雞肉涼拌麵
Good for a hot summer lunch or dinner.
Ingredients: (for 2 servings)
2oz (112g) whole wheat spaghetti, cook as directed, run cold water over and drain well
cooked chicken meat, shredded
English cumcumber, carrot, red/orange/yellow pepper, celery .... etc.,
cut into match like sticks
Seasame dressing:
1 Tbsp sesame paste, 2 tsp creamy peanut butter, 2tsp sesame oil,
1 1/2 Tbsp soy sauce, 2 tsp white vinegar, 1/4 tsp sugar, 1/4 tsp salt,
1 tsp minced garlic, 5 Tbsp water
2oz (112g) 全麥意粉, 煮熟過冷河
熟雞肉, 撕幼 (我用食剩的白切雞胸肉)
切條青瓜, 西芹, 紅蘿白, 紅, 橙椒... 等隨意
芝蔴汁:
1 大匙芝蔴醬, 2小匙滑花生醬, 2小匙蔴油, 1 1/2大匙生抽或醬油膏,
2小匙白醋, 1/4小匙糖, 1/4小匙鹽, 1小匙蒜泥, 5大匙水
Directions:
Prepare the dressing by mixing the sesame paste, peanut butter and seseame oil together, slowly and gradually add the water, stir until smooth, then add the rest of the ingredients. Adjust seasoning to taste. Add to the cooked spaghetti and toss until the spaghetti are well coated with the dressing. Serve with the chicken and shredded vegetables. Sprinkle with roasted sesame.
芝蔴醬與花生醬及蔴油攪勻,逐少加入水至光滑無小粒再加入其餘材料, 試味, 倒入麵條內拌勻放碟上與雞絲蔬菜條同上, 可灑上炒過白芝蔴及葱絲作装飾。
