This is an easy and healthy one-dish dinner.
Ingredients :
2 cod fillets, about 6 oz each; 2 cups Taiwanese cabbage, shredded; 1/2 onion, chopped;
2 cups cooked rice, (I used leftover mixed rice); sea salt, freshly ground black pepper;
garlic powder; 1/2 Tbsp soy sauce; 1 tsp olive oil; 1 tsp chopped fresh cilantro
Directions :
Clean the cod and dry with a paper towel. If using fresh cod fillets, sprinkle both sides with
garlic powder, salt and pepper. Add about 1 tsp oyster sauce together with the garlic powder,
salt and pepper if using frozen fillets.
Mix the cabbage and onion together with some salt and pepper.
Stir the soy sauce together with the rice.
In the steam case, spread the rice evenly at the bottom, then the cabbage and onion and
top with the cod fillets. Brush the olive oil on top of the fillets and sprinkle lightly with more
garlic powder,
Close the steam case and put inside a preheated 375 F oven for 25 minutes.
Open the lid and bake for another 5 minutes until the cod is nicely browned.
Sprinkle with the chopped cilantro and serve.
Makes 2 servings
Tips :
Can use frozen mixed vegetables instead of the Taiwanese cabbage.
Can just steam the normal way if you do not have a Lekue steam case.
