Potatoes and Tuna Casserole

Ingredients :

5 large potatoes, peeled and cut into chunks;   2 pouches (7 oz)  tuna in water;
2 cups frozen mixed vegetables;  4 Tbsp butter (I used Smart Balance);  
1 cup milk (I used almond milk);  1 1/2 cups shredded Mozzarella cheese;  
1/2 cup freshly grated Parmesan cheese;  sea salt and freshly ground black pepper

Directions :

Preheat the oven to 400F. Put the potatoes in a large pot, add enough water to just cover the 
potatoes, bring to a boil, cover and simmer for about 15 minutes or until very tender.
Meanwhile, cook the frozen mixed vegetables in 1/2 cup of boiling water, cover and simmer
for 6 minutes, drain. When the potatoes are done, drain and return to the same pot. Mash well 
with a potato masher. Add the butter and milk, stir, then add both the cheese and season to 
taste with the salt and pepper. Remove about 1/3 of the mashed potatoes and set aside. Stir in 
the mixed vegetables and the tuna to the rest of the potatoes, mix to combine. Pour evenly into 
a 13"X9"X2" baking dish. Spread the reserved mashed potatoes on top, decorate with a fork 
and dot with small pieces of butter. Bake in the oven for 25 minutes. Then turn the oven to broil 
and broil until the top is golden brown. Let the casserole rest about 5 minutes before serving.
