Tried this scone recipe that uses less butter and uses half and half cream
instead of heavy cream.
Ingredients :
2 cups all purpose flour; 1/4 cup packed brown sugar; 1 Tbsp baking powder;
1/4 tsp sea salt; 1/4 cup butter, chilled and cut into small pieces;
1 cup fresh blueberries; 3/4 cup half and half cream; 1 egg
Topping : 1 Tbsp of raw sugar ( I just used regular sugar )
Directions :
Preheat oven to 400F. In a large mixing bowl stir together the flour, brown
sugar, baking powder and salt, cut in the butter until the flour becomes
breadcrumbs like, add the blueberries and toss to mix. In a smaller bowl beat
the egg, then add the cream and beat until well mixed, pour into the flour
mixture, stir with a rubber scraper until a dough is formed. Remove to a floured
surface. Knead about 3 to 4 times and form into a ball. Press down to flatten.
The dough will be very sticky, add just enough flour to shape. I find using a
pair of plastic disposable gloves really helps. Divide the circle of dough
into 8 parts, sprinkle with the raw sugar and put into the oven for 20 mins. until
golden brown.
