Carrot Cake

Ingredients :
4 eggs;  1 cup brown sugar;  1/2 cup white sugar;  1/2 cup oil ( I used virgin coconut oil );
1/2 cup unsweetened apple sauce;  2 tsp vanilla;  2 cups all purpose flour;  1/2 tsp salt;  
1 tsp baking soda;  1 tsp baking powder;  2 tsp cinnamon powder;  3 cups grated carrots;
1 cup chopped walnuts or pecans

Directions :
Preheat oven to 350F. Mix together the sugar, oil, apple sauce, eggs and vanilla in a large
bowl. In another bowl sift together flour, salt, baking soda, baking powder and cinnamon.
Add to the egg and oil mixture and combine. Then add the grated carrots and chopped 
walnuts, stir until mixed. Pour into a greased and floured (or lined) 9"X13" pan and bake for
about 35 - 40 minutes until done. Cool completely before slicing.
