Another nice and easy summer dish. The Old Bay Seasoning in this recipe really makes a big difference in taste.
Ingredients :
1 lb cooked shrimps, sliced into halves; 3/4 cup celery, diced (about 4 stalks);
1/2 cup purple onion, diced; 1 roma tomato, seeded and diced;
1/2 carrot, peeled and grated; 1/2 cup mayonnaise; 2 tsp Old Bay Seasoning;
2 tsp fresh lemon juice; 1/4 tsp Worcestershire sauce
Directions :
Mix all the vegetables together with the shrimps, add the mayonnaise, lemon
juice, Worcestershire sauce and the Old Bay Seasoning. Stir carefully until
they are all mixed, put in the refrigerator and chill for 1 hour or more.
Serve on a bed of lettuce together with 2 hard boiled eggs and 1 sliced avocado.
Can also serve as filling for pita bread or sandwiches.
