Shrimp Egg Rolls

Ingredients :

4 large eggs, beaten;  10 medium size shrimps, shelled and sliced into 2;
1/2 tsp sea salt;  1/4 tsp minced ginger;  2 cups chopped bean sprouts;
2 green onions, chopped;  1 stalk celery, chopped;  1 Tbsp chopped parsley

材料 :

4 個大蛋, 打散;  10隻中蝦, 去殼片開;  1/2 小匙 海鹽;  1/4 小匙薑茸;
2 杯切碎芽菜;  2 條蔥, 切碎;  1 條西芹, 切粒;  1 大匙切碎蕃芫茜

Directions :

Marinate the shrimp with a little salt, pepper and seasame oil, then fry in a pan
with a little oil until just cooked. In medium bowl, combine eggs, salt, ginger,
bean sprouts, green onions, celery and parsley. Heat a small amount of oil in
a non-stick pan over medium heat, pour half of the egg mixture into the pan,
arrange half of the shrimp on top and cook till the middle is not liquidty but
still moist. Carefully roll the egg up and place in a plate. Repeat with the other
half of the egg mixture. Cut into thick slices when cool down and serve.

做法 :

蝦用鹽, 胡椒粉及些少蔴油醃一會然後煎至剛熟盛起。碗內放入其他
材料拌勻, 易潔平底鑊下些少油用中火燒熱, 倒入一半蛋料掃平, 然
後將一半的蝦排在上面煎至蛋液凝固但仍潮濕, 用鑊鏟將蛋卷好放置
一旁待涼, 同時繼續煎好餘下蛋料。蛋卷攤凉後切厚片排在碟上即成。
