Ingredients :
1/2 lb fresh medium shrimps, shelled; 2 slices of bacon, cut into pieces; 1 Tbsp butter or oil;
1/2 onion, chopped; 1 red bell pepper, diced; 8 oz of frozen mixed vegetables; 2 Tbsp flour;
1 (14oz) can of chicken broth; 1/3 cup of half and half; 2/3 cup grated cheese (any kind);
salt and freshly ground black pepper to taste
Directions :
Marinate shrimps with some salt and pepper. In a pot, melt butter over medium heat.
Cook onion for a few minutes, add bacon pieces, then the diced red bell pepper and the frozen
mixed vegetables, stir fry until vegetables soften. Sprinkle the flour evenly over the top, stir to
combine. Pour in the chicken broth, stir constantly until it thickened, about 4 minutes. Add more
liquid if you want a more soupy chowder. Lower the heat to low and add the half and half, cover
and allow to simmer for 15 minutes. Turn heat back to medium, add the shrimps, cook until the
shrimps turn pink, turn the heat to low again and stir in the grated cheese. When the cheese is
all melted, add salt and pepper to taste.
Serve ladled into bread bowls or over cooked pasta.
Makes 2 servings.
