Honey Wheat Bagels

Ingredients :

3 cups (360g) bread flour,  1 cup (120g) wheat flour,  1Tbsp honey,
1 1/2 tsp salt,  1 Tbsp grape seed or olive oil,  2 tsp instant yeast,
1 1/4 to 1 1/2 cups warm water
Toppings:
sesame seeds, poppy seeds, any kind of dried herb, chopped onion or garlic,
1 egg white

Directions :

Using a mixer or by hand, mix the ingredients together and knead into a smooth,
soft dough. Start with 1 1/4 cup of warm water and add more if needed to.  I
mixed and kneaded for about 5 minutes on #2 then 10 minutes on #4 with a Kitchen
Aid stand mixer. Cover the dough and let it rise in room temperature for 1 hour,
till double in size. Flour your working space, knead the dough into a ball, flatten
and divide into 6 to 8 equal parts. Cover and rest for 15 minutes. Roll each into a
long rope like the shape of a snake, about 9" long. Wrap around your hand with
both ends overlapping at your palm, press onto the table to seal, rolling the sealed
ends at the same time to make them round. Let the bagels rise for another 20 minutes
covered. Meanwhile, boil a pot of water, about 8 cups, add 2 Tbsp sugar, stir
until the sugar melts. Place the bagels onto the boiling water 1 min on each side,
make sure the bagels do not touch each other. I boiled 2 bagels at a time. When
done, take them out and brush the top with egg white, sprinkle with the topping of
your choice and place onto lined baking sheet. Bake in a preheated 425F oven
for 20 minutes.
