Bake Cod With Rice

焗芝士魚飯

Ingredients :

2 frozen cod fillets (or any white fish fillets),  1/2 onion, chopped,
2 cups frozen vegetables (I used broccoli),
2 cups leftover cooked rice
Sauce:  1 can cream of mushroom or any kind of cream soup,
              2 Tbsp low fat mayonnaise, 2 Tbsp grated parmesan cheese,
              1/2 tsp cayenne

材料 :

石班肉兩大塊,  半個洋蔥切碎, 2 杯雪藏蔬菜(我用西蘭花),  兩碗冷飯
汁:  1 罐忌亷磨茹湯, 或任何忌亷湯,  2 大匙低油沙律醬,
       2 大匙碎芝士,  1/2 小匙辣椒粉

Directions :

Dry fillets with paper towel, sprinkle with some salt and black pepper.
Lightly oil a baking dish, layer the rice in the bottom, then the frozen vegetables
and the chopped onion. Arrange the fillets on top. In a small bowl, combine the
soup, mayonnaise, cheese and cayenne, spoon over the fish and vegetables
evenly. Bake in a 375F oven for 40 mins, 50 mins if use frozen fish fillets.

做法 :

魚肉抹乾, 灑上鹽及胡椒粉。焗盆抹油, 飯排在底層, 上放雪藏蔬菜及洋葱
碎, 魚肉排在菜上。汁料攪勻, 平均抹在魚及菜上, 放入375F焗爐內焗40分
鐘至金黃色, 若用仍冰凍的魚肉要焗50分鐘。
