Banana Muffins

Ingredients :

1 cup all-purpose flour; 
1/2 cup whole wheat flour; 
1 tsp baking powder;
1 tsp baking soda; 
1/2 tsp salt; 
1/2 tsp cinnamon powder; 
1/4 tsp nutmeg;
3 large bananas, mashed; 
1/3 cup sugar; 
1/3 cup brown sugar; 
1 egg, beaten;
1/3 cup sunflower oil; 
1 tsp vanilla

Topping :
9 walnut halves; 
chopped nuts


Directions :

Preheat oven to 375F. Sift the flour, baking powder, baking soda, salt, cinnamon, nutmeg
and the brown sugar together in a large mixing bowl. In another bowl, beat  the mashed
bananas, oil, sugar and egg together, then add the vanilla. Pour over the flour mixture, 
stir just until mix. Pour into lined muffin tins, sprinkle with the chopped nuts then put a
walnut piece on top. Bake in the oven for 22 - 25 minutes. Make 9 large muffins.




 

 
Updates  :

I doubled the recipe to make a banana cake using a chiffon cake pan.
Lower oven temperature to 350F and bake for 50-55 minutes.
