Beef with Bitter Melon in Black Bean Sauce

Ingredients :

2 large bitter melons, about 1 lb;  6 oz flank steak, sliced;  4 garlics, chopped;
1 Tbsp Black Bean Garlic Sauce (Lee Kum Kee);  1 Tbsp oyster sauce

Marinade for the beef :  1 Tbsp soy sauce; 1/2 Tbsp cooking wine;
                                      1 tsp corn starch;  2 Tbsp cold water;  freshly ground black pepper; 
                                      1 Tbsp oil;  2 tsp sesame oil

Directions :

Wash the bitter melons, cut lengthwise in the middle, remove the seeds with
a spoon and slice into thick pieces. Mix in 1 Tbsp of salt and set aside.
Marinate the beef for 15 minutes to 1/2 hour. Heat some water in a wok
until boil, add the salted bitter melon slices. Cook uncovered until just before
the water begins to boil again. Pour over a colander and run with cold tap water,
drain well. Heat the wok with some oil on high heat, add the black bean sauce
and the chopped garlic, stir fry a little bit and spread them evenly over the
bottom of the wok. Arrange the marinated beef on top in one layer, fry for
about a minute, turn and fry the other side until the beef is cooked. Add the
bitter melon slices and the oyster sauce, stir to mix and serve.
