Ingredients :
1 1/8 cups water; 2 Tbsp olive oil; 1/2 tsp sugar; 1 1/2 tsp sea salt;
3 cups all purpose flour, I used white whole wheat flour;
1 1/2 tsp instant yeast
Directions :
Mix the flour with the sugar. In a bread machine pan add water, oil, salt and
the flour mixture. Make a dent on top for the yeast. Press the Dough button.
When the dough is ready, remove onto a lightly floured surface. Divide the
dough into 8 equal parts and form into balls. Cover with plastic wrap and let
it rise again for 30 mins. Preheat oven to 500F together with a baking sheet
in the lower rack of the oven. Roll each dough out into thin rounds, about
6" - 7" in diameter. Arrange 2 rounds in a parchment paper. Put onto the hot
baking sheet and bake for about 3 mins until slightly brown and all puff up.
Remove from the oven and cover with a clean kitchen towel. Repeat with the
rest of the dough.
To serve, cut pita bread into halves and fill with any fillings you like. I used
roast turkey slices, chopped lettuce, purple onion rings, tomato strips and top
with some Japanese mayonnaise just before serving.
