These are moist and chewy cake-like bars, very tasty and healthy.
Ingredients :
A : 2 medium ripe bananas, well mashed; 2 Tbsp ground flax seeds,
1/4 cup almond milk; 1/2 cup canola oil ( I used grape seed oil );
1/2 cup maple syrup; 1/4 cup agave nectar ( or honey ); 1 tsp vanilla extract;
B : 1 cup all-purpose flour; 1 cup whole wheat flour; 1 1/2 tsp ground
cinnamon; 1/4 tsp ground nutmeg; 1 tsp baking soda; 1/2 tsp sea salt
C : 1 cup old fashioned rolled oats; 1 cup walnut halves, toasted and chopped;
1 cup raisins ( I used cranberries )
Directions :
Preheat oven to 350F. Line a 9" X 13" baking pan with parchment paper.
In a large mixing bowl, combine and mix A together until smooth. Stir in B and
mix to form a moist batter. Fold in C and stir until just mixed. The dough will be
moist yet thick and sticky. Pour batter into prepared pan and spread evenly.
Bake for 25 - 30 mins. until slightly puffy and golden brown.
Cool completely and cut into squares.
