Ingredients :
4 lbs boneless chuck roast; 1 Tbsp oil;
2 onions, coarsely chopped; 4 cloves garlic, minced; 2 bay leaves;
1 tsp salt; 1/2 tsp freshly ground black pepper; 1 Tbsp oyster sauce
Directions :
Preheat oven to 325F. Heat the oil in a dutch oven over medium high heat.
Sear the roast on all sides for 4 minutes each, remove from the pan. Using
the same dutch oven or a roasting pan, arrange the onion, garlic and 1 bay leaf
in the bottom of the pan. Mix the salt, pepper and oyster sauce together, rub
evenly all over the roast and put on top of the onion. Place the remaining
bay leaf on top of the roast, and cover with the lid or cover tightly with
tin foil. Cook in the preheated oven for 30 minutes. Reduce the heat to
300F and cook for another 1 1/2 hours. Remove roast to a serving platter,
let it rest for 10 to 15 minutes before slicing. Thicken the gravy in the
pan and pour over the roast. Serve with steamed vegetables.
